We love lamb! Roast lamb or lamb cutlets are my favourite. Lamb cutlets are now a premium cut - making them a bit of a treat rather than every day fare.
I wanted to try something new and different, and this is what I came up with....

How to?
Heat a pan on a high heat and add a little olive oil, cook cutlets on each side for 1 - 2 minutes. Place on a baking tray that has the Rosemary scattered on it. Sprinkle with all other ingredients, and cover tightly with foil. Place in a 200° Celsius oven for 6 minutes, uncover and place back in the oven for a further 8 - 15 minutes - depending on your preferences.

- 1 Sprig of Rosemary
- 1 Large clove Garlic
- 2 - 3 Tablespoons of Balsamic vinegar
- 2 Tablespoons of Brown Sugar
- Salt and Pepper to taste
